For the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Cocktail (makes 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Method
To prepare the Citrus Syrup: Place the listed ingredients inside a pan, heat until it reaches a light boil, mixing until the sugar dissolves. Then, remove from the burner and leave to reach room temperature fully. Decant to a sterilised bottle, cap it and store chilled, where it will keep for up to four weeks.
To make Premix: Combine every spirits and syrup into a big jug, leave to sit for one hour, then filter it preferably using cheesecloth, so it's completely strained.
When ready to serve: Measure 85ml of the batch mix into your stirring glass containing ice, gently stirring lightly for one minute until cold. Filter into an frosted cocktail glass or equivalent, decorate with a few cranberries and finish with a quick spritz of the essential oil above the glass.
